Made with the Williams variety pear coming from the I.G.P. area of Mantova, that’s a typical mostarda which has always been used in pairing with boiled meats, Salame Mantovano and Grana Padano.
Its measured hot flavors and ideal consistency make it suitable for all hard and mature cheeses as well as sausages and boiled meats. In the kitchen its versatility is brought out both in entrees such as Gorgonzola Risotto, or as a sauce for a Pecorino raviolo and in main courses like a chicken salade.
