Grilled Artichoke Hearts with Lemon and Garlic
Ingredients:

4 large artichokes
2 lemons, halved
4 cloves garlic, minced
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish (optional)
Instructions:

Prepare the Artichokes: Fill a large bowl with water and squeeze the juice from the lemons into it. This will be used to prevent the artichokes from browning as you prepare them.

Trim the Artichokes: Start by trimming the stem of each artichoke, leaving about 1/2 inch attached. Remove any tough outer leaves. Cut off the top third of each artichoke, and then use kitchen scissors to snip off the sharp tips of the remaining leaves.

Boil the Artichokes: Bring a large pot of salted water to a boil. Add the trimmed artichokes and cook for about 15-20 minutes, or until a leaf near the center of an artichoke pulls out easily. Drain and set aside to cool.

Prepare the Marinade: In a small bowl, whisk together the minced garlic, extra-virgin olive oil, and the juice of one lemon. Season with salt and freshly ground black pepper to taste.

Halve the Artichokes: Once the artichokes are cool enough to handle, cut them in half lengthwise.

Grill the Artichokes: Preheat a grill or grill pan over medium-high heat. Brush the cut sides of the artichokes with the garlic and lemon marinade.

Grill the Artichokes: Place the artichokes, cut side down, on the grill. Grill for about 3-4 minutes, or until they develop grill marks and start to char slightly. Brush the tops with more marinade, then flip them over and grill for an additional 3-4 minutes.

Serve: Plate the Grilled Artichoke Hearts with Lemon and Garlic and drizzle any remaining marinade over the top. Garnish with fresh chopped parsley if desired.
